Perfecting The Idea of The Niche Pub

Gastro pubs were all the rage as chefs became interested in making a change to the traditional pub menus. Mainstays of the pub were reinvented with fresher, higher quality ingredients and paired with more enticing and exciting flavours. The pub has played a key role in the way we British meet, eat and imbibe, but the pub itself has been changing and morphing into a far more appealing dining experience that surpasses the usual stale sandwich and bag of crisps once commonly found at the local. Some pubs have embraced the idea of creating a niche pub with a focus on one style or type of cuisine. This allows them to become the go to spot for specific food items separating them from the rest of the pubs competing for guests in their neighbourhood. Here, The Old Crown, one of the most famous of Holborn Pubs, renowned for its niche, different approach, shares a few tips!

Discovering a Niche

Discovering a niche for a pub is not much different than creating a concept for any restaurant. It is all about finding one area of cuisine on which to focus and then being determined on doing it very, very well. It can start with a traditional pub menu that is perfected much like the gastro pub approach or can zone in on a specific foods such as a burger. Once a niche is discovered the chef can then apply their creativity and understanding of ingredients to develop a unique and intriguing menu that is smaller and easier to manage while providing enough variety to keep guests coming back for more.

Focus on Branding

Once a niche is determined it can be easy for a pub to lose focus. This leads to the pub losing its niche as well. When creating a niche for a pub it is important to stay dedicated to the brand and create a menu that can be added to with specials to keep it interesting. However once a chef begins to stray from the basic menu concept they will lose their area of expertise which in turn means they may lose their appeal to their specific clientele.

Fresh, Quality Ingredients

It is not enough to come up with a novel concept to sell a pub. The only thing that is going to keep people coming back for more is a consistent use of fresh, quality ingredients. Fresh food is what separates a good restaurant from an outstanding restaurant. It doesn’t matter if it is a local spot serving up lunch and breakfast or a gourmet restaurant with a focus on fine dining. If a restaurant is not using fresh, quality ingredients they will not attract new customers or keep the ones they already have. Part of the search for appealing ingredients is finding a way to bring food to the next level. A burger becomes sublime when a superior beef is used over a frozen patty for example. Chefs who take the time toseek out food that is fresh and local, as well as using organic suppliers for both meat and produce will produce a far superior meal.

Taking care to prepare each dish using the same techniques will provide guests with an exceptional experience that will bring them back and help spread the word that a pub has found its niche
